Tasmanian Cape Grim Beef
Eye Fillet
The Eye Filet deserves its reputation as the most tender, elegant steak of all. Carved from the prized tenderloin, this delicate, lightly marbled cut has a less robust flavour than our other steaks.
Porterhouse or Sirloin
The porterhouse is a firm, well-marbled steak from the heart of the loin. The characteristic “white tail” keeps it juicy during cooking. Its full flavour and aroma come alive when grilled.
Scotch Fillet and Rib Eye
“The Rib Eye” or “Scotch Fillet” is from the beef rib. When cut into steaks, these cuts are one of the most popular and juiciest steaks. Meat from the rib section is more tender and fattier than most other cuts of beef. This extra fat makes the steaks tender and flavorsome. These cuts of steak can be cut boneless “Scotch Fillet” or bone-in “Rib Eye”. The cuts are otherwise identical, although our cuts vary in size.
Rump
The tastiest steak full of flavour. Our Chef’s leave just enough of the exterior fat to bring out its uniquely bold, beefy flavour. If you prefer a steak with a robust taste and texture, this one's for you!

Over the last two years The Railway has forged a successful relationship with one of Australia’s premier beef farmers, Tasmanian Cape Grim Beef.
What is Cape Grim Tasmanian Natural Beef?
Tasmania is renowned for its exceptionally clean environment and wilderness heritage areas. Pollution free winds blow thousands of kilometers across the vast, empty Southern Ocean.
Cape Grim on the North West corner of the island hosts a monitoring station that captures the world’s purest air. Cape Grim Tasmanian Natural Beef is exceptional quality beef grown in a pristine environment.
Some of the quality cuts available are Cube Roll, Rump and Eye Fillet. Only the best grass-fed cattle are selected. They are graded according to Meat Standards Australia guidelines that guarantee tenderness and eating quality.
The Cape Grim Farmers
We are very proud of the select group of farmers that supply us with the beef used for our Cape Grim Tasmanian Natural Beef cuts.
It is a key group of 40 beef farmers, all based in the north west of Tasmania. They are required to meet stringent quality and processing standards set by Meat Standards Australia and supply meat exclusively to us.Cape Grim producers are selected on cattle breeding and genetic pointers which deliver the most consistent quality eating. Their farms are located in the highest rainfall areas of Tasmania, delivering the highest and most consistent fodder growth available.
The use of hormones, genetically modified organisms (GMOs) and antibiotics are not permitted in Tasmanian beef farming, creating the tenderest beef on the market today.
Our farmers have known for decades that their grass-fed beef is special, but until now it has only been available to the export market. We are very pleased that we can now provide this high quality beef to Australia’s premier steak venues, including The Railway Club Hotel in Port Melbourne.
