In partnership with Flinders & Co and H.W Greenhams & Sons, The Lost Cuts compares six exceptional cuts — bistro fillet vs onglet, skirt vs spinalis, and flat iron vs tenderloin — sourced from leading regions and producers across the country.

Guided by our culinary team, guests will experience how these cuts differ in texture, flavour and provenance, with recommended wines available on consumption to match each stage of the journey.
